I Dip, You Dip, We Dip: Kari's Corn Salsa

So I made an amazing corn salsa over this past weekend.  D says it's "corn relish" and I'm pretty sure it's salsa.  So...you can call it whatever you want.  The point of the matter is IT'S REALLY GOOD!  You should try it!



Recipe:
1 can of whole kernel sweet corn, drained
1 bell pepper, diced
3 jalapeno peppers, seeded and diced
1 small can green chiles
1.5 cups shredded Colby jack cheese
1/2 cup light sour cream
2 tbsp. mayo
2 tbsp. cilantro, chopped
2 green onions, chopped
a splash of lime juice



Mix it all together and get to munching!!  I used some Garden of Eatin' Organic Blue Corn Tortilla Chips.

My mom got me an incredible tool awhile back to make the process so much easier: The Vidalia Chop Wizard.  I actually doubled the recipe to make more for our gathering Saturday night.  However, it was a lot...so if you're making this just for yourself, don't double it.  However, this Chop Wizard made the process so much quicker and easier!  I know you can get them at Bed, Bath, and Beyond (as that's where this one came from).





Let me know if you try it out.  It's sooo incredibly good!  It's the perfect mix of spicy and sweet.

  3. I don't like onions or hot peppers when it comes to texture... think it would be gross if I pureed those and then added the other stuff??? That way I could still get the flavor!!

    1. I think a puree would be fine as long as you drain off any excess "water". Otherwise, the mix with the sour cream may seem to runny. Otherwise, I'd give it a shot. If you do, let me know how it goes!

    1. That's why D was all "It's a relish!" However, I think, if it has jalapenos, onions, or any other pepper in it, it's a salsa. lol. Let me know if you try it!

    1. HA! This made me laugh! I love this Chop Wizard. They have 2 sizes too. If I wanted bigger pieces, I had an attachment to make that happen. You'll have to try the recipe and let me know what you think!
